Okay, so many of you know this already, but I have just discovered the deliciousness of spaghetti squash. Being a pasta lover, any other alternative was never up to snuff. BUT! Despite the slight difference in texture...I can do this! I've been staring at the squash I bought weeks ago in my attempt to eat healthy (yet again!) Today I actually did something with it. Roasted it, shredded it, put salt, pepper, and some parmesan cheese on it. And yummy!!!! I can handle this!!! So good!
